Canning has begun for me
I had some carrots in the fridge that needed to be used or lose them, so I sliced and canned them.
I got 5 quarts out of what I had in the fridge.
To Do:
Chop and freeze onions I have as they are starting to go bad. I bought a 50lb bag a few months ago and we have about a 1/4 of that left that needs used or they are lost.
Can up some meat out of freezer as freezer is overflowing and has little room in.

Sunday Rest
It has been a long week and I welcome today to rest and revive.
I started my Spring Cleaning Friday and have got 3 rooms done with 6 more to go. I worked on the kitchen and laundry room yesterday and I was so happy to see that pillow last night.
So this week, I’ll be deep cleaning the rest of the house in anticipation of planting season here.

Salad Dressing Recipes to Make at Home
I got the recipes below from Crystal at Homemaking on the Homestead.
Ranch Salad Dressing Tried this. It is WONDERFUL!! Better than the version I was making. This one is a keeper!
Bleu Cheese Salad Dressing I'm not much on Bleu Cheese dressing so I haven’t tried this one and probably won’t.
Catalina Salad Dressing oh so good and better than a certain store brand.
Italian Salad Dressing Next up for me to try. I hope it's as good as the others. I like the recipe I have but am always open for an even better one.
Oriental Salad Dressing This one intrigues me and I am going to try it sometime.
This is her homemade mayonnaise recipe too. YUMMY!!

I recently had the opportunity to review the DVD and the CD. Now I may be a little bias, but I love Celtic Woman! I do prefer their classic Irish songs more so over the other genres they perform, but that’s the Irish blood in my veins wanting the Irish songs.
I have watched youtube performances by Celtic Woman and I have to say the DVD does not disappoint. Wonderful! The DVD does have a couple other songs that are not on the CD, which is a bonus.
I admit that I gave the DVD and the CD to my husband as a Valentine’s gift. He was thrilled because he is a fan of Celtic Woman.

Spring?
It has been a very mild winter for us here in I can’t help for feeling like Spring has already sprung. The trees are budding. The daffodils are already blooming in some areas around us. My rosemary is even bloomed out with pretty blue blooms. It has been unseasonable warm which is making me itch to get my hands in the dirt in the garden.

Downton Abbey
I recently saw mention online of the PBS show: Downton Abbey.
Never having heard of it or seen it, I looked online and found it. We don’t have tv reception so I rely on finding things online. Well I’m glad I looked because now I’m hooked.
PBS always had some great programs on and it seems they did it again. What a great show!

Peperoncini beef sandwiches in the Crock Pot

Pink Slime
I’m not talking about slime like children would play with or pond slime, etc. but rather…. pink meat.
You heard me right, pink meat. To be more specific, pink beef.
Now if you are a meat eater, you know that the beef you buy in natural foods stores and most other stores, from a farmer, etc. is not pink. No beef should be a red color.
So where is the pink meat coming from?
The pink meat comes from a process that cleans it with ammonium hydroxide. In other words that meat is cleaned with a type of ammonia. That process was even shown in the movie, Food, Inc. If you have never seen that movie, I highly recommend it. It will change the way you eat.
Ever had a burger from McDonald’s?
Did you just answer yes? Well guess what. You have ate ammonium hydroxide meat.
I’m not kidding you. Check it out on their website and read the statement wherein they admit it. Yahoo did a news article on this not long ago: McDonald’s confirms that it’s no longer using ‘pink slime’ chemical in hamburgers.
I don’t know about y’all, but I use ammonia to clean with sometimes but I sure don’t want to eat it.
Now according to their website I referenced above, as of the beginning of 2011, they stopped using the pink meat. How many of us have ate a hamburger from there prior to that time thought? I did. My children did. My parents did. My brothers and sisters did as well as numerous other America citizens. What did that ammonia cleaned meat do to our insides? That’s a scary thought.
What is even more scarier is the fact that the The U.S. Agriculture Department recognizes ammonium hydroxide as “generally safe”. Read a bottle of ammonia though and it tells you “Do Not Ingest”. Hmmmm… see a conflict there. It bothers me to know that the USDA doesn’t even make companies mark packages or place a notice anywhere in their business that meat they are using is cleaned with ammonia.
I have bought ground beef (hamburger meat) from stores before that when you fried it, it smelled like a wet dog. I wonder now if that meat was cleaned with ammonia. Ground beef or any meat for that matter should not smell like a wet dog or any other funky smell when it is being fried, cooked, etc.
We have been organically for a while now but was still buying meats at non-organic stores in the area due to costs. This last week, I was able to buy our meats from a natural foods store and let me tell you the meat is far superior. We’ve ate organic meat before but now are determined to not every buy the non-organic meats again.
The movie Food, Inc. changed the way we eat and we are even more determined to eat organically and eat meat that is hormone free and antibiotic free. I couldn’t tell you when the last time I ate a McDonald’s burger was. It’s been awhile. I do love their sweet tea though when we are out and about running errands. I think if I ever find out they do something funky to their tea, I’ll be devastated. This ol’ Southern gal loves her sweet iced tea.

Are You a Prepper?
I’m not in the full sense of the word. I do stock up on items though when I find good sales, etc. We are a big household. We eat and use a lot of stuff.
I know some Preppers are prepping or stocking up majorly for a catastrophic event or as they call The End of The World As We Know It (TEOTWAWKI).
To me the TEOTWAWKI is the Apocalypse. That will end the world as we know it. However, I don’t plan on being here for the Apocalypse because I will be gone as I’ve made other arrangements. When that trumpet blows, I’m outta here!
However, I can relate to the preppers in the sense that I believe we should be prepared for whatever may come along. Whether that is a job loss, weather related causes, civil unrest in our town, cities, or country. Being prepared is a good thing.

Buying organic products costs a little more than conventionally grown and processed foods. However the benefits outweighs the costs.
Many people assume you can’t save money when buying organic foods, but it can be done.
1. Shop the sales – Even organic & health food stores have sales, whether weekly or monthly. Visit the website for your local store and sign up for the newsletter, see the sale ads, etc.
2. Make Shopping List before you go to the store. Impulse buys are a big budget buster.
3. Use Coupons – Yes Coupons. There are coupons available for organic and natural products. Some stores even have their own store coupons that you can combine with a regular coupon. Check out the Organic / Natural Internet Printables forum at WeUseCoupons.com for many printable coupons on organic and natural products.
4. Buy the store brand - Some organic and natural foods stores have their own brand. Buying the store brand compared to a name brand item can garner some great savings.
5. Buy in bulk – Many organic and natural foods stores offers a bulk discount when you buy by the case or large unopened packages such as wheat berries, rolled oats (regular oatmeal), and more. Ask your store for details and you can even place an order through them for the bulk items. Also check out their bulk items wherein you can buy nuts, dried fruit, whole grains, and more from the self-serve bins by the per pound price.
6. Eat what you buy. How many times have you had to throw out vegetables or fruits because you didn’t use them in time? Make a menu plan either for a week, two weeks, or a month and eat what you buy. Eat your leftovers. Eat them for lunch the next day or use them to make another meal if you have leftover vegetables or meat. Make a double batch of a meal and freeze the half of it for a meal another day.

A total of 45 lbs lost since Sept. 2011
I am still losing weight and it’s feeling great! (sorry bad rhyme there).
I am getting closer to my goal weight and I am so excited!
I have tried to lose weight for years and would lose some and gain it right back.\So since September I have lost 45 lbs!!!
This is what I have been doing or have done:
-
cutting out the soda - avoiding high fructose corn syrup
- eating organically and avoiding the processed foods
- increasing my water intake to 64oz to a gallon a day,
- cutting my portions when it comes to desserts and eating those less frequently too
- walking - a little at a time as my knees are almost shot. I am hoping losing the weight, etc. will help those as well as me get off my bp meds
I have 35 lbs more to lose to get to my goal I set for myself.
If I wanted to go for the weight recommended for my height and look like a total stick (as I was 18), I would need to lose an additional 15 pounds after I reach my personal goal. I'm going for my goal first and then see how that goes.

I want REAL food
I wish more stores in my immediate area carried lots more organic foods. The grocery stores closest to where I live carry a very limited supply of organic. If I want to have a lot of organic products available to me while shopping, I have to drive an hour into the city.
Why organics you ask?
I want food the way God intended them too be.
---- NO GMO’s ----
God created the plants and He doesn’t need a scientist intervening and basically saying “He didn’t know what He was doing. Let’s make this on herbicide ready. Let’s mix this fish cell with strawberry cell.”
No. God knew what He was doing.
I want my food the real way.
I want beef from cows that have fed on grass; not corn or even chicken carcasses. Cows are herbivores, not carnivores. One day, we’ll raise a few cows ourselves and you can be guaranteed they will eat grass.
I want chicken free of antibiotics and growth hormones. That’s why we raise our own now not only for meat but for eggs. There is no comparison to a farm egg.
I don’t want to ingest 20 different foods that all have some form of corn in them.
I don’t want water with fluoride in it.
I want REAL food, not genetically modified!
REAL food – the way God made it and the way God intended it.
