Some like it hot. Some don’t.  I’m one of the ones that does.  I love me some hot and spicy food. I’ve been a fan of Frank’s RedHot Sauce for some time. Now they have a thicker sauce out that is well … just like their original hot sauce but thicker.

Barbecued Garlic Pin It

Barbecued Garlic

8 heads Garlic, peeled
4 tablespoons Butter, cut into 8 small pats
Springs of Fresh Rosemary or oregano, if fresh is unavailable, use 2 tsp of dried.

Place the heads of garlic on a sheet of heavy-duty foil. Top with the pats of butter and a few sprigs of fresh rosemary or oregano or 2 tsp of dried. Fold the foil over the garlic to form a pocket and seal well. Cook over hot coals in your grill for about 45 minutes, turning the package occasionally with tongs.  Serve with any dipping sauce of your choice.

Spicy Cajun Party Mix Pin It

Spicy Cajun Party Mix

1/4 cup butter
1 Tbsp parsley flakes
1 tsp celery salt
1 tsp garlic powder
1/2 tsp cayenne pepper
8 drops red hot pepper sauce
2-2/3 cups Wheat Chex.
2-2/3 cups Corn Chex.
2-2/3 cups Rice Chex.
1-1/2 cups French-fried onions -- 3 oz.

Preheat oven to 250 degrees. Melt the butter in a kettle. In a large bowl, put the butter and stir in parsley, celery salt, garlic, cayenne pepper and pepper sauce. Gradually add cereals, stirring until all pieces are evenly coated. Put in a roasting pan or on a baking sheet (may need 2). Bake 35 to 40 minutes, stirring every 15 minutes. Add the French's fried onions and mix well. Spread on a paper towel to cool. Store in air tight container.

MICROWAVE DIRECTIONS:

In 4 quart microwave-safe dish melt butter on HIGH 1 minute. Stir in parsley, celery salt, garlic, cayenne pepper and pepper sauce. Gradually add the cereals, stirring until all pieces are evenly coated. Microwave on High 3 - 4 minutes, stirring every minute. Add the onions and mix well. Cook an additional 1 minute. Spread on a paper towel to cool.

1 pint warm water

Pour into a spray bottle and gently shake to mix.

To use:  spray on tough spots and let set about 15 minutes.  Then wash either in the washer or by hand.

BOOK REVIEW: The Stocked Kitchen Pin It

The Stocked Kitchen: One Grocery List . . . Endless Recipes Authors: Sarah Kallio and Stacey Krastins Publisher: Atria, a division of Simon and Schuster (July 5, 2011) ISBN-13: 978-1451635355

I have been thumbing through this book since it arrived for me to review.  I have been making notes of recipes I wanted to try as well as just reading it. My husband made the comment, “It looks like you found a book that has caught your interest.”  And indeed it has.

I made the Traditional/Dill Coleslaw to go with our meal for Father’s Day this past Sunday. It was different from the coleslaw I normally make and have made for years but it was a hit with many of the children and myself. Hubby liked it but said he liked what I usually make better… now that didn’t stop him from eating this coleslaw though.

He even got the book and was reading it and looking at the recipes.  He has already requested that I make the Curry Chicken Salad that is in the book. He is hoping that is close to that kind of chicken salad he had at the organic grocery store’s deli a couple of times.

I also like the tear out grocery lists in the back of the book.  Although I’ll never tear them out, because I have all but a handful of items on the list on hand most of the time anyway as I cook from scratch most of the time and cook at home 3 meals a day almost every day of the week.  Plus I really don’t agree with the authors that you need to toss or donate everything in your pantry that is not on their grocery list.  Many people in this economy can not toss or donate all their food items just to go out and buy new to match one cookbook’s list of ingredients.  Realization is that there are many families just struggling to put food on the table period right now.

Other than that, I do give the authors thumbs up on trying to do away with the pre-packaged, highly-processed foods though. That alone makes this book a worthwhile investment as you won’t find a recipe calling for a box of mac & cheese, or some other thing along those lines.  While the recipes are not strictly from scratch recipes they do utilize some kind of store-bought convenience foods (canned beans, canned fruit, etc.) .   I also really do like the recipes in this book and they can be adapted for home-canned, from scratch foods with a little planning ahead.

If you are like me in the fact that you do cook from scratch as well as home-can, freeze, and/or dehydrate items, we will have to adjust a few recipes and plan ahead though as the Authors buy canned items such as canned beans and I buy dried in bulk and cook them as needed. I can cook them the night before though in the crockpot and be ready to go. I do home-can dried beans too to make jars of cooked beans at the ready on the shelves.   Wherein I make my own chicken and beef broth, the authors use the store bought containers but that is a relatively easy exchange as I can use my chicken broth in quart jars. They utilize a lot of frozen bread dough wherein I make my own bread, pie crusts, etc. but again, that can be easily exchanged and just leave in the bread  dough stage to use in the recipes that calls for the dough.   Such things as canned pears, applesauce, etc… if you home-can either of those, you can use those obviously.

Homemade Oven Cleaner Pin It

Oven Cleaner

1 cup household ammonia
3 cups boiling water

Warm your oven to 200º for about 20 minutes and then turn it off. Open the windows and doors to ventilate your kitchen. Pour ammonia into a small dish and put it on the top rack. Fill your broiler pan with the boiling water and set that on the bottom rack. Shut oven door and leave there overnight.

In the morning, open the doors and windows again if you closed them, and stand back a little as you open the oven door. Leave the kitchen and let the fumes dissipate out of the room.

Wash off the inside of the oven with liquid detergent and water. Rinse well.

REVIEW: Mrs. Dash Salt-Free Seasonings Pin It

 

When I was in the hospital a little over 4 years ago for issues with my heart, I was given packets of Mrs. Dash® Salt-Free Seasonings.  Now being a salt-aholic that I am, I was wanting my salt not some salt-free packet of seasonings.

What with the blandness of the hospital food and with reservations, I opened that little packet of seasoning up. Afterall, the hospital food was already horrible how much more worse could I make it?

Well lo and behold, that Mrs Dash® seasoning packet (original blend… I still remember that) made that bland food pop out with some flavor.   I was hooked!!  I love Mrs. Dash®  Seasoning!

It will be 5 years in October that I had that experience and I have bought Mrs. Dash®  items several times since then.. but I haven’t given up my salt completely.

Multi-Purpose Furniture Polish

2 tbsp olive oil
1 tbsp white vinegar
1 quart warm water

Add olive oil and vinegar to water and mix well. This can be stored in a glass bottle or jar or a spray bottle. It works best if kept warm while using. Place the bottle in a pan of hot water for a little while to warm it up. The solution will wash off dirt and dust and leave a light oil film After applying, rub dry with a soft, clean cloth.

Homemade Fabric Softener Pin It

Fabric Softener

You can use baking soda.  Add 1/4 cup to the wash load.  Clothes will feel soft and smell fresh.

OR

You can use Vinegar.  Add 1/4 cup white vinegar to the final rinse cycle.  This will help remove any soap scum.

Pour baking soda, salt and vinegar into the drain. Wait about 15 minutes for these to dissolve the "clog". Flush drain thoroughly with the kettle of boiling water.

Our new 10’ picnic Table that hubby built Pin It

I am sitting outside using the netbook watching hubby as he finishes up the building of the picnic table.

He built/is building a 10' picnic table for us. We bought the materials for it a few weeks back. I have been wanting one but the ones at Lowes were 6' for $99.xx.  Hubby wrote  up the material list, etc. for the 10' and we were able to get the materials for the same price as what the 6' was going to cost us! More picnic table for the same amount of money! Gotta love it!!

Now we will have nice spot to come and have lunch or supper outside as well as have a place outside to eat with cookouts, etc.
Herb garden, raised herb beds, and main garden beds are weeded... finished up in the cool of the morning. Children are out in the back yard playing as well as the olders pulling up the pea stakes, twine, and plants as they are done.

Older boys are putting a few woodchips in the walk-in gate area of the garden too.

Gonna be a nice day as it is cool and the birds are singing. Love the outdoors like this as long as the bugs stay off me. Skeeters think I'm their all you can eat buffet.

 

The picture of the finished table.   I am truly blessed to have a husband that possesses carpentry skills. So very thankful for his hard work in building this for us.

Make Your Own Laundry Starch Pin It

Starch for Laundry

1 TBSP cornstarch
1 pint cold water

Mix and stir to dissolve the cornstarch.  Pour into a spray bottle.

To use: Shake before using.  Lightly spray onto whatever item you need to starch and iron accordingly. 

NOTE: Only make one batch up at a time to use as it will and can go bad and sour.

Baking day on the homestead Pin It

Thursdays are my baking day.  I usually try to get all my bread made for the week as well as making a couple dozen dinner rolls. I have began making hoagie rolls as well and attempting hot dog rolls. All whole wheat from fresh ground flour I grind using my Whisper Mill. 

Today’s baking consisted of:

• 7 loaves of bread (ignore that one there in the front as I tore it getting it out of the pan as I didn’t let it cool a little first)
• 2-1/2 dozen (30) dinner rolls
• 30 hoagie rolls (and a couple look more like they may be more suitable for a hotdog bun lol)

I use Marilyn's Famous Whole Wheat Bread Recipe  and just make into loaves, dinner rolls, hoagie rolls, or the attempted hotdog buns.

I use the directions for the large mixer and I use a Bosch Mixer that is about 5 or 6 years old. In that time, they have redesigned it to look like the one in that link.

This is a picture of what my Bosch mixer looks like when I bought it back a few years ago.

I have the blender attachment, the food processor, the cookie paddles and the French Whips for it.

I use 12" bread pans called Norpro 12 Inch Nonstick Bread Pan and they are AWESOME!    I only have 5 of them. I wouldn't mind getting 3 more of them actually.  In addition to those, I use 2 regular loaf pans so I have extra dough left over that I make rolls with.     The pans also come in 8" and 10": 8 Inch Nonstick Bread Pan  and the 10 Inch Nonstick Bread Pan.

I love homemade whole wheat bread fresh from the oven!!  One of the smaller loaves didn’t make it fully in the picture because of that either. teehee

Gamma Seal Lids – OH YEAH!! Pin It

I just got my order of  Gamma Seal Lids from Amazon!!!  I’m so stinking excited!! Why the excitement you ask?  Well, you see I buy things in bulk from rolled oats, to popcorn (plain, old-fashioned), beans, and wheat berries to sugar and more.  I have quite a few buckets. I also use containers in my cupboards and on my counter that I refill out of these buckets for everyday use.

I use 5 gallon buckets to store my stuff. I use Diatomaceous Earth (Food Grade) in my buckets to control any type of insect that may try to get in and spoil the contents whether they get in from our country property or come home with me in the packaging (yes it happens).

So what’s a gamma seal or how do you use it?  Check out this video on youtube.

 

Well I’ve been using  a Bucket Lid Opener to pry the lids off and every now and then I have to replace a lid because the opener messed one up from opening it so much. 

Well now I have the easy of snapping on the gamma seal and then spinning the lid on and off. No more lid opener!!  Well I will have to use it for a little bit on some of my other buckets until I can save up enough Amazon gift cards earned through Swagbucks as that is how I paid for these seven I got and only had to chip in .28 out of my household budget. 

I bought these: Gamma2 The Gamma Seal Lid For 3.5 to 7 Gallon Buckets or Pails and yes all of them came black. I was kinda hoping for a variety but they were the least expensive ones that Amazon had and I signed up for Amazon Prime trial period at no cost and got them shipped 2 days free shipping.   I still need about 8 more bucket lids.    I’ll start saving my swagbucks and redeeming them for Amazon gift cards again.

June 9, 2011 - A proposed settlement has been reached in a class action lawsuit about Kellogg’s advertising for its Rice Krispies cereal and Cocoa Krispies cereal.  The lawsuit claims the advertising was not true.  Kellogg stands by its advertising and denies it did anything wrong.  The Court did not decide who was right.  If you are a Class Member, you may send in a claim form by mail or online to receive up to $15.  Please see

Who are the Class Members? Class Members are those who purchased, not for resale purposes, Kellogg’s Rice Krispies or Cocoa Krispies in the United States between June 1, 2009 and March 1, 2010.

What does the settlement provide?  A cash fund of $2.5 million will be created to pay Class Counsel’s fees and expenses, to pay a $5,000 class representative incentive award to each of three named Plaintiffs, and to reimburse Class Members for boxes of Rice Krispies or Cocoa Krispies they purchased, up to three boxes.  Details about how much you may receive are available at www.CerealAdvertisingSettlement.com.  Kellogg also has agreed to distribute to charities that provide food to the indigent certain Kellogg branded food items that have a retail value of $2.5 million.

What are Class Members’ Options? To ask for cash and remain in the Class, Class Members must mail or submit a claim form online by November 16, 2011. If a Class Member does not wish to participate in the settlement, the Class Member may request exclusion from the Class by July 30, 2011.  Class Members may stay in the Class and object to the settlement by July 25, 2011. or by calling 1 888-404-8013.  The Court will hold a hearing on August 29, 2011 to consider the settlement and Class Counsel’s request for attorneys’ fees and expenses.
