Tornado Damage Update Pin It

We are learning more each day from what damage there is up here on the mountain.  

According to the local news channels, the NWS has confirmed it was an EF3 Tornado that struck up here.

The New Harmony community seems to be one of the harder hit areas along with Brayton Mtn, and Pitts Gap. The path of the tornado did not stop though.  It kept on going  over to Hwy 30, Morgan Springs Road, all way over the Liberty Hill Road area and beyond. Not sure if that is the same tornado that made it’s way all the way to Spring City or not.   

There is a path of debris, downed trees, houses and barns damaged or completely missing.

Part of the path came as close as 3 miles (drive time) from our house. There's a mobile home on that road that is completely gone. A horse trailer on it's side messed up in the field behind where the trailer would have been, tin from barns, trees snapped like twigs, a power pole snapped like a toothpick, and just a path of debris.  

I am so thankful to God that there was a hedge of protection around us Wednesday.

Please if you are in this area and you can, do help whether with clean-up, search and rescue, monetary, food, clothing, etc. There are families who have lost everything.  A command post is set up for storm victims at the Jackson store on New Harmony. There's also a Red Cross shelter at the First Southern Baptist Church. Any of those places you can drop off donations.

Do NOT come up here and tell people who want to help and only here to sightsee and take pictures. This is not a tourist attraction!  This is people’s lives!

Tornado touched down last night on the mountain we live on. Pin It

A tornado touched down last night  during the severe storm on Dayton Mountain, where we live.  This is about a mile (rough guess) from where we were holed up in a friends basement. No damage at her house or mine but some friends of hers were not so lucky.  

The sky was unbelievable here yesterday. We had 3 lines of storms roll through and each one kept getting scarier.  We heard the train noise just as we had ushered all the children into the basement. Then the hail hit and we got down into the basement as well.    I have muddy laundry to wash up today and shoes as her basement started to fill up with water and we had to come up and take shelter in the hallway for a bit.

Hubby called this morning  and told us about the damage as he was on his way to work.  We drove out and got a few pictures but these do not show the big picture of the damage or the emotions one feels when seeing something like this.

 

The first four photos are on Hwy. 30 that goes across Dayton Mountain.

This is a mobile home missing half of it with trees snapped off like twigs above it. There's a trailer just across the road from this one unscathed and trees all around it snapped off, etc.

This is the area across the road from the graveyard and damaged mobile home. You can see all the snapped trees in the background. The mobile home I said was unscathed is to the right of the photo (you can barely see the white of the end of it).

We drove out to another  part of the path of the tornado and saw barns missing parts of the roof, etc. -- this would have been the side wind damage from the tornado as it swept through on the other side of where the barn and house is in this picture. We turned around as obviously the hardest hit area is blocked off for emergency personnel.

This is on Walkertown Road leading over to Riggs Road (I think it is) which goes by the Apple Barn and Jackson’s Farm Supply.

Please keep the families who have lost their homes, etc.  as well as the rescue workers, police officers, and other work crews who are out there working today.     I just saw a news report online that there are 4 confirmed deaths in our county, that is not counting the counties around us that got hit by the severe storms too.

If you live in any of the areas that were affected by these storms yesterday, please considering donating your time to help, funds if possible, and food, blankets, etc.    Call your local Red Cross, sheriff's dept, etc. to inquire what you can do, etc.   They will need your help!

Book Reviews: Trouble at the Zoo and Rescue, the first installments of Bindi Irwin’s exciting new chapter book series Pin It

I was excited to receive these two books for my children. I have one son who is an avid reader and read both of these books in one sitting.  He LOVED them!

Another son started reading one of them and is enjoying it as well. I could tell by the way he started talking to his older brother about things in the book.

Now our 8 year old daughter is wanting to read them too.

Since receiving the books just a few days ago, both of the older boys (ages 12 and 10) have read them.  The 12 year old is actually reading them again now.

So looks like these books were a hit in our house!

Hope they will be in yours as well.

Questions from Readers about Couponing. Pin It

Since my two most recent posts regarding Couponing Ethics, Fraud & TLC Extreme Couponing and the follow up post with A response to the Couponing Ethics, Fraud & TLC Extreme Couponing, I have received a few more questions and comments.

Two of the readers had some more questions that I thought needed to be addressed openly on the blog as others may have the same questions.

The first question comes from Laura W. (and as she said, no relation, lol)…

I know you are probaly busy as can be but i was wondering if perhaps you could answer some questions i have on couponing. I am trying to start since my family is now containing 5 people instead of just 2. If you have time please explain a few things to me like our grocery store will take coupons up to 60 cents. Okay does this mean that that is the limit without doubling it? I didn't quite get that one. I have bought me the binder as it says on your site. I have them catergorized and am hoping to do my first shopping trip with them this weekend. If you could maybe give me that info and any other tips it would be GREATLY appreciated!

ANSWER:    Some grocery stores double coupons up to and including a certain face value on the coupon. 

For an example the .60 coupons you mentioned would double and be worth $1.20.    Keep in mind that some stores have limits on how many like (meaning the exact same coupon) they will double in one shopping order. 

Also at that store that doubles up to .60 coupons, you may have a coupon that is .40 – that would double and be worth .80 now. Likewise a .35 coupon being doubled to .70,  and so on.

If you have a .65 coupon to use at that store, it would not double so it would be only worth .65.

Just check with your store’s customer service desk to find out the coupon policy or visit that store’s website wherein you may possibly be able to print off a copy of their coupon policy and put it in your binder for reference.  Not all stores double and the ones that do double vary in regards to what the face value is that they will double and have limitations, etc. on how many they will double.

ANSWER: Multiple Coupons are how you make the most of a sale or a great price on an item.

For an example: I have 10 coupons for .50 off 1 Crest Toothpaste.  Crest Toothpaste is on sale at the XYZ store this week for a $1.  That store also will double the face value of my coupon (refer to the answer above on doubling as not all stores double).   Now that coupon after it is doubled is worth a $1 and thus will make that Crest Toothpaste free (just pay tax).

Unless you have a store coupon and a manufacturer coupon, you CAN NOT use more than one coupon on any one item. 

Also read the coupon for any stipulations that may be on it.

Most stores allow you to use one store coupon (if available) and a regular manufacturer’s coupon (coupon from the Sunday paper, magazine, from the company, etc.) together.  

Again, just check with your store’s customer service desk to find out the coupon policy or visit that store’s website wherein you may possibly be able to print off a copy of their coupon policy and put it in your binder for reference.

Consumers Cautioned to Choose Organic Milk without Dubious, Illegal Ingredients

Cornucopia, Wis.—The Cornucopia Institute filed a formal request with the Federal Trade Commission (FTC) today, asking for an investigation into Dean Foods' advertisements for its Horizon milk with Omega-3 DHA, alleging the nation's largest dairy conglomerate with consumer fraud in misrepresenting the nutritional benefits of its products.

The dairy giant's White Wave division, which markets the Horizon organic milk brand, recently launched a major nationwide marketing campaign that focuses on purported benefits to children's brain development from drinking milk with added DHA oil, which is highly processed from fermented algae.

According to The Cornucopia Institute's complaint, Dean Foods' claims that their proprietary DHA oil "supports brain health" are not based on credible scientific evidence, and are therefore misleading consumers.

"DHA is one of many naturally occurring omega-3 fatty acids, which scientists believe is beneficial when consumed through real, wholesome foods such as fish, flax seeds, nuts or grass fed milk and meat. But the DHA in Horizon's milk comes from a highly processed oil, extracted from fermented algae," says Charlotte Vallaeys, Director of Farm and Food Policy at The Cornucopia Institute, a non-profit research group based in Wisconsin. "There is little scientific evidence to support the claim that adding these manufactured oils to foods is in any way beneficial to children's cognitive development," she adds.

The algal oil is manufactured and marketed by Martek Biosciences Corporation, based in Maryland. The Cornucopia Institute has charged that food processors adding Martek's algal oils to organic foods are in violation of the Organic Food Production Act and USDA organic standards, which prohibit unapproved non-organically produced ingredients in organic foods.

As reported in the Washington Post, a former administrator at the USDA's National Organic Program, during the Bush administration, allowed these oils in organics after she was contacted by a corporate lobbyist who asked her to reinterpret the federal rules governing organic foods. Last year, the new director of the National Organic Program, which regulates organic foods on the US market, publicly stated that ingredients like Martek's oils have been allowed in organic foods due to an "incorrect" interpretation of the federal organic standards.

Under current organic standards, food processors may add essential nutrients to organic foods if they are covered under the Food and Drug Administration's official fortification rule. Essential nutrients that have been proven to benefit public health, like folic acid, which prevent birth defects, can legally be added to organic foods. But both the FDA and organic advocates advise against indiscriminate fortification of foods.

Earlier this week, on April 18, the National Organic Program made public a document by the Food and Drug Administration that clearly states that DHA oils are not "essential nutrients" and are not covered under the FDA's fortification policy.

Cornucopia stated that its research indicates that 90% of all organic milk brands are supplied by ethical family-scale farmers and do not include any questionable additives.

"These highly processed, novel ingredients do not belong in organic foods, and it is important to remember that very few processors are adding them. Companies like Dean Foods/Horizon realize that these are valuable marketing tools, designed to create a competitive advantage, even if science does not back up their marketing claims," states Mark Kastel, Senior Farm Policy Analyst with Cornucopia.

The FTC, the government agency charged by Congress for ensuring that companies advertise truthfully in the marketplace, has already sent a dozen warning letters to companies that use DHA algal oil as the basis for claims that their products benefit children's brain development.

In addition, The Cornucopia Institute is asking the FTC to investigate Dr. Alan Greene, a prominent pediatrician (who maintains a popular website advising parents) for allegedly making false statements to promote Dean's Horizon products. Cornucopia is also pursuing a separate professional ethics complaint against Dr. Greene.

In 2009, the European Food Safety Authority rejected a petition to allow a health claim related to DHA supplementation in milk for babies and toddlers and brain development, citing "insufficient" scientific data to support such a claim.

In its formal request to the FTC, the Cornucopia Institute lays out scientific data that shows that the addition of DHA to infant formula does not benefit babies' cognitive development.

Few clinical trials have been conducted to assess the benefits of Martek's oils for children's brain development, and those that have been conducted have largely shown no benefits exist. For example, an experiment by Martek Biosciences Corporation on 175 children, published in Clinical Pediatrics, concluded: "For each test [of cognitive development], results indicated that changes from baseline to end of treatment were not statistically significantly different between the docosahexaenoic acid group and the placebo group."

"Given that the FTC has already warned companies that they need convincing scientific evidence to substantiate their claims that DHA supplementation benefits brain development, it is disturbing to see a company flout these warnings and launch a major advertising campaign—centered around the very same claims that the FTC warned them against," says Vallaeys.

In 2009, the FDA formally requested certain companies to review their advertising and product packaging to ensure that they are not making any health-related claims for their products without competent and reliable scientific evidence to support the claims.

"That these unapproved DHA oils now serve as a marketing tool for Dean Foods/Horizon, without substantiation, only adds insult to injury for the ethical organic milk processors who respect the organic standards," says Vallaeys.

Only two organic dairy processors are currently adding Martek's DHA algal oil to its organic milk products—Horizon and Stremick's. Organic Valley’s milk with omega-3 DHA includes fish oil, which has been approved for use in organics.

The vast majority of organic dairy products on market shelves are produced in accordance to the organic standards, which prohibit synthetic pesticides, genetically engineered and modified organisms, antibiotics and artificial growth hormones, etc.

Dean Foods' marketing campaign:

Dean Foods/White Wave makes misleading claims regarding its Horizon milk with added omega-3 DHA. Cartons state "DHA Omega-3 Supports Brain Health." Print advertisements proclaim “Milk with DHA Omega-3 isn’t rocket science, but it is genius" and state "DHA Omega-3, a nutrient which supports healthy brain development"” and "it’s as delicious as it is smart." Another print ad states, "a smart move for growing brains."

Radio ads announce, "Kids are smart. Continue to help support their brain development with Horizon Organic DHA Omega-3 Milk." Television ads show a child beating her grandfather at a chess game, and calls the DHA-supplemented milk a "smart move."

The ads are run on Radio Disney, Disney FamilyFun magazine, disney.com, kaboose.com, disneyfamily.com and familyfun.com. Print ads appear in American Baby, Better Homes and Gardens, Everyday Food, Family Circle, Fitness, Martha Stewart Living, Scholastic Parent and Child and Working Mother.

Dr. Greene Misleads Organic Consumers

According to The Cornucopia Institute, Dean Foods' online promotional materials are especially misleading given the presence of videos featuring Dr. Alan Greene, a pediatrician who endorses these products and gives consumers a false and misleading sense that the DHA oil has been medically proven to benefit health. Cornucopia asked the FTC to focus not only on Dean Foods/White Wave, but also include Dr. Alan Greene and his role in Dean Foods’ false and misleading advertising.

Dr. Greene's statements in the video seem aimed at scaring parents of young children into buying products with added DHA. In the video, he wears a stethoscope and uses phrases like "my big concerns," "it’s like the DHA is ripped away" and "you need to intentionally choose some way to get DHA into them," which are extremely powerful when spoken by a prominent pediatrician.

"Parents of young children are generally concerned about their child’s proper development, and these videos seem to be designed to profit from these concerns—to sell unnecessary products to well-meaning parents," says Kastel.

Dr. Greene.com is a popular website sponsored by Dean Foods WhiteWave division.

"We have met with Dr. Greene on a number of occasions in an effort to encourage him to evaluate his ethical approach to this topic," stated Kastel. "But his zeal to promote DHA, without differentiating between natural and synthetic sources that might not actually be effective, was unwavering."

Kastel added: "Dr. Greene's response reminds me of the famous quote by Upton Sinclair, 'It is difficult to get a man to understand something when his salary depends on his not understanding it.'"

DHA oil linked to infant illness

Hundreds of reports have been filed with the Food and Drug Administration from parents who noticed that their infants experienced serious diarrhea, vomiting and other gastrointestinal problems when consuming infant formula with Martek's algal DHA and fungal ARA oils. A sampling of these reports clearly shows that the reactions disappear as soon as the infant is given equivalent formula without these novel ingredients.

Formula companies and Martek Biosciences Corporation have failed to perform adequate post-market surveillance to ensure the safety of their novel ingredients, despite a clear request from the Food and Drug Administration that additional safety studies be shared with the public.

A few of my favorite kitchen things Pin It

As a homemaker, I have a few things that are just well… my favorite for various reasons.

One of those things is a nice rubber spatula and I have a few in different sizes.  One for bowl size things like muffin batter, cake batter, and pancake batter. Another that is perfect size to fit down into a mayo jar to get the last bit out.

I love rubber spatulas like this because you can scrape out the remaining batter in a bowl and usually have enough to make another pancake, cupcake, or muffin. 

Rubber spatulas are a great frugal kitchen item to have on hand because of what I just stated above. You won’t waste that extra batter that would stick to the bowl like using a regular spoon.  Plus you can get out that last little bit of mayo, mustard, etc.

Why toss food in the trash or wash it down the drain? 


Another favorite kitchen item is a nice, plain white, flour sack towel.These are the only kitchen towels that I use. I love them!

They are absorbent yet lightweight so they dry quickly and with them being all white, easily bleached if necessary because face it, kitchen towels can get grubby.

In olden days, people would embroidery on a flour sack towel and give it as a gift.

Anyone who has been reading this blog for some amount of time or has known me for a while in real life knows how much I LOVE cast iron cookware, especially the Lodge Brand because it’s made in the USA. The Lodge Cast Iron is manufactured in a town not too far away from where we live actually. I have been to their outlet store and I think I may have drooled on their floor a few times. Sorry Lodge!!

 

So why do I love cast iron cookware so much?  Well…

  • It’s durable and long lasting when you care for it.
  • Some pieces of cast iron have actually been handed down from generation to generation. I have a few pieces that belonged to my Mother.
  • It’s better than any teflon coated non-stick pan when properly seasoned  .
  • You can’t beat cornbread or fried chicken made in one. There’s just no comparison.

I found a #14 skillet at a yard sale for $1 once. I snatched that baby up so fast that it would have made your head spin from the wind from it!

I have skillets in various sizes, a dutch oven that turns into a roaster and the lid a skillet, a griddle, corn muffin  pan, pizza pan, and more. I LOVE THEM!!


I also like canning jars just not for canning but storing my spices in and more.

I especially like the the hinged lid ones like the one shown to the right for storing things.  I have some smaller ones I use for spices, dried fruit, and other things.

They are pretty as well as functional.  Ok, so I’m a little bit glass-jar-obsessed at times.  I have to fight the urge when I see them in the thrift stores. Sometime the urge wins. 

Oh and I have a few old blue colored canning jars, some with the zinc lids and some without, that I inherited from my parents home.   My sweet hubby made me a hand soap dispenser for our kitchen like this one: {DIY} Mason Jar Soap Dispenser using one of them.   Oh how I love it!!   I love repurposing things and this was right up my alley with the country look to it as well.

One of my favorite appliances though is the Bosch Universal Mixer. Mine looks like the top picture on the right but they redesigned it and it now looks like the bottom one.  I like the style I have better.

I have the blender, the food processor, cookie paddles,  and whips for it.

This thing of mine holds 20 cups of flour!!! I can mix and knead enough dough in it to make 6 loaves of bread at a time!!  Oh yeah baby!  Homemade, whole wheat, bread!!  YUM YUM YUM!

The food processor is a little smaller than I like but it definitely gets the job done.

There’s no comparison to fresh milled wheat flour when making bread.

  • You control the temperature as there is a heat control option you can set for whatever type item you are drying.
  • You can use plexi sheets to make fruit leather and they work better than those round plastic things that fit other dehydrators.
  • You can fit a lot of food on the trays to dry at one time!
  • Fits nicely on a counter or on a pull out drawer (which dh converted a cabinet for our most used items that has two pull out drawers/shelves. This sits on the lower one and plugs in behind the shelf. I use it often!)

Broke a Plate or Bowl to your Dinner Set? An Idea Pin It


We've had our current white dinneware set for over 8 years.
Over those years, a plate here or there got broke, or a bowl broke, etc.
So I watched thrift stores and found a plate here and there that matched our set to replace the broken ones and also picked up extras for company or to replace yet another broken piece.

Even if you can't find the exact patttern (ours is just a white set with a fruit design (no color) you can go with one set of dishes all in the same color.

I now have a prettya white soup turene with a ribbed design and matches the plates I bought wonderfully and I even found a nice white ceramic tea pot to go with our special tea cup and saucers the girls and I have.

So don't despair and throw out the whole set over one broke plate or bowl, Check the thrift stores for matching ones or go with the idea I mentioned above.

Canned Shredded Zucchini Pin It

Many people shred zucchini to use for breads, muffins, etc. and if they have an abundance of shredded zucchini, they often freeze it.

Well did you know you can also can it?

If you decide to home-can it, you will need to use a Pressure Canner  as zucchini's are a low acid food.  I like to use the shredded zucchini for making zucchini bread, muffins, and pancakes. 

To Can Shredded Zucchini…

You’ll need:

  • zucchini (even bigs one are ok for this)
  • canning salt

Shred the zukes then pack the shredded zucchini into hot jars.

Add 1/2 tsp. canning salt to pints and 1 tsp. canning salt to quarts.

Cover with boiling water and leave 1/2" head space from the top of the jar. 

Put on seals and rings tightly and process in a pressure canner.

Process pints for 30 minutes and quarts for 40 minutes, both at 10 pounds pressure.

(Higher elevations are more poundage... for us, I have to pressure can it at 12 pounds.)

Okra Pickles Pin It

Until last year, I had never made okra pickles....and boy are they gooooood!

We’ve planted some okra seeds so now it’s just waiting for them to grow and produce so I can make more.

Okra Pickles

3 lbs. okra, whole and about 3” to 4” long
3 c. water
1 c. white vinegar
1/4 c. pickling salt
2 cloves garlic, minced
Wash okra, and pack the okra into hot pint jars.
Combine the remaining  ingredients in a medium pot and bring to a boil. Remove mixture from stove and slowly pour  over okra into the jars, leaving about 1/2” head space from the top rim of the jar.
Wipe the rims. Put on the hot seal and ring.
Process in boiling water bath for 5 minutes.
Makes 4 pints.
This recipe can be doubled, tripled, etc. for how ever much you need.

I am a simple, no-fuss, type of woman when it comes to many things and that includes cooking that way. I love down-home cooking and most of the time I steer clear of stuff I can’t pronounce or don’t know what to do with it.

This book grabbed my attention immediately with just the title of it… 4 INGREDIENTS.   Who wouldn’t like to make quick, easy and delicious recipes with just 4 ingredients?!

After receiving this book, I delved in and thumbed through the book to find something of interest to cook.  There wasn’t a lack of something sounding good, that’s for sure! 

There are simple recipes for breakfast items, appetizers, condiments, main dishes, side dishes, drinks, desserts, and one of my favorite sections --- handy home tips wherein the authors give you tips for a variety of things to keep your home clean and smelling fresh, beauty tips, and much more.

I do have to say though that the book misleads you with the title a little though because the authors didn’t include salt, pepper and water as one of the 4 ingredients even though you will want to season some of the food to taste as everyone’s preference and taste buds are different.

Overall, this book has found a place in my cookbook section of the kitchen. I hope it finds a place in yours as well.

About the Authors:

Kim McCosker is a formal financial advisor and the mother of three boys: Morgan (8), Hamilton (5), and Flynn (2), and the wife of one: Glen.   Kim designed the 4 INGREDIENTS concept, and with her childhood friend, Rachael Bermingham, she is now the author of four bestselling 4 INGREDIENTS books.  She lives in Queensland, Australia with her family.
