A tip I read a long time ago was to do veggie preps as soon as you come home with your groceries and you have everything put away except the produce.
Go ahead and chop or make carrot sticks and put them in a container.
Shred lettuce or tear for salads, etc. and put into a container
Slice cucumbers and put in container
Cut strips of peppers and put in a container.
I used to do that a while and it worked great.
Now I just make a habit of checking the fridge daily for what we have that need used up and make stuff for lunch or change up my menu plans for that day to accommodate if necessary.
