Grandma Rhonda left a comment on my post "Dehydrating Onions" asking if I have ever chopped my onions before dehydrating (instead of slicing them)?  It seems like they would be a bit more handy when it comes time to use them.......less storage too.

 

Good question Grandma Rhonda! 

I have chopped them before dehydrating and this works well but if you have  a dehydrator that the slats in the trays are big, your onions will fall through when you rotate the trays or will fall through down on to the fan or drying unit.  This is my problem, thus why I slice them and dry them that way.  I have two dehydrators. One is a Ronco that my husband brought into the marriage and the other one is a Mr. Coffee that I bought at a thrift store.  Both have trays that have openings in them that doesn't allow me to dry chopped things very well.   I so want a 9-tray Excalibur dehydrator because it has screen-like trays and the fan blows from the back instead of from the bottom, thus no rotating of the trays and things dry faster.

Once the onion slices dry though, they are easy to break up so it's no biggie to me by slicing them the just break them up as needed or break up to store them.
