Pancakes & Syrup

I make our own pancake mix as well as a few other mixes.

Pancake Mix

3-1/2 cups of whole wheat flour

3-1/4 cups white flour

3/4 cup sugar

1 TBSP  baking soda

1 TBSP salt

In a large bowl, mix all the ingredients together thoroughly. Store in an airtight container. 

 

To Make The Pancakes

1-1/2 cups of mix

1-1/2 cups of buttermilk

1 egg

2 TBSP melted butter or vegetable oil

In a medium bowl, combine all the ingredients thoroughly and whisk until no lumps are visible.

Cook on a hot, greased griddle until browned on both sides.  

Makes about 12 pancakes.

 

 

Syrup

1 cup brown sugar, firmly packed

1 cup sugar, (regular white granulated)

1 cup water

1 teaspoon maple extract

Combine both sugars and water in a small saucepan. Bring  the mixture to a boil and cook for 2 minutes. Be sure to stir it so it doesn't stick. Remove from the heat and stir in the maple extract.  Allow to cool before serving.

Makes about 2 cups of syrup. You can refrigerate any leftovers.
