BOOK REVIEW: Supermom's Simple Guide to Super Salads by Erica Johns

The Supermom's Simple Guide to Super Salads (ebook) is just that ... a simple guide to get you on your way to enjoying a delicious, healthy salad but with a few extras thrown in.

Ms. Johns statement in the book about bagged spinach being cheaper than the bunches has this ol' frugalite intrigued.  I will definitely be investigating that theory because I buy spinach from time to time throughout the year.  The only concern I have is the recent outbreaks of eColi that was in the news not so long ago concerning bagged spinach.  I know, I know. It could be in the bunches too.... the key is to wash it thoroughly I guess or do without it.

Ms. Johns suggest that if you rewash the bagged items, make sure you use a salad spinner or something comparable to get the greens really dry as this is the key to keeping your salads fresher for a longer period of time.  This is very true.  If you keep your salad mix dry, it keeps longer. I usually make a salad up and it lasts us for about three days... with this many people in the household of salad lovers... I do good to stretch it that far.

Her statement regarding iceberg lettuce to make salads with found me guilty as charged. She says that you shouldn't use the iceberg lettuce for salads as it is is almost completely void of flavor and nutrition. Iceberg lettuce is what most restaurants use. I'll admit, I use it to make ours because it's usually the least expensive to buy.

She goes on to recommend other ingredients to make a super salad that is not only colorful but delicious and good for you.
